Almond Flour Pancakes

Make ahead of time for breakfast

PNC Clients: 2 Pancakes Equals 1/2 Grain, 1 Protein an 1 Fat


1 cup almond flour
2 eggs
1/4 cup water
4 tbsp. applesauce
1 tsp. coconut oil
1/2 tsp. vanilla extract
1/4 tsp. salt
1 tsp. Stevia (or honey, more to taste)


  1. Mix together all the ingredients until well combined. Add a touch of water or milk if the batter is too thick.
  2. Heat a nonstick skillet over medium high heat. Spray with cooking spray and flip once the batter begins to bubble and pop. Cook for another 1-2 minutes and serve with your favorite pancake toppings.
