Microwave Pumpkin Custard is the perfect way to indulge in a pumpkin dessert without having to even turn on the oven. It’s tastes just like pumpkin pie filling but is made with just a few ingredients in your microwave for a guilt-free, delicious treat.

3 MIN COOK TIME: 3 MIN TOTAL TIME: 6 MINUTES
1 custard
1/2 cup canned pumpkin puree or Organic unsweetened applesauce
1 whole egg
1/2 tsp vanilla
½ tsp cinnamon
Combine all ingredients well in a small bowl.
Pour into a small mug or ramekin, sprayed with cooking spray.
Microwave for 2 1/2 to 3 minutes until firm.
Top with a teaspoon of plain yogurt, whipped cream, nuts, or a drizzle of honey
1/2 tsp pumpkin pie spice (more or less to taste)
1 packet Stevia (or 1 tsp brown sugar, maple syrup, 20 calories)
