Pan-Seared Rosemary-Garlic Sirloin Steak with Cauliflower-Potato Mash and Steamed Green Beans

Pan-Seared Rosemary-Garlic Sirloin Steak

Serves 2

Ingredients

  • ½ Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp dried rosemary, crushed
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ lb boneless top sirloin steak

Instructions

  1. Combine oil, garlic, rosemary, salt and pepper; rub all over steak. Cover and chill 1 to 3 hours.
  2. Cook steak in a grill pan or cast-iron skillet over medium-high heat 5 to 6 minutes per side or to desired doneness. Let stand 10 minutes before slicing.

Cauliflower-Potato Mash and Steamed Green Beans

Serves 2

Ingredients

  • 1½ cups cauliflower florets
  • ¼ lb Yukon Gold potatoes, cut into 1-inch chunks
  • 2 Tbsp 2% reduced-fat plain Greek yogurt
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (12-oz) pkg frozen green beans

Instructions

  1. Bring cauliflower and potatoes to a boil in water to cover in a saucepan; cook 15 minutes or until tender.
  2. Drain; mash with yogurt, ½ Tbsp oil, and ¼ tsp each salt and pepper.
  3. Meanwhile, cook beans according to package directions. Transfer to a bowl; toss with ½ Tbsp oil and ¼ tsp each salt and pepper.
